  3. I love LOVE beet leaves. Make some beet rolls (think cabbage rolls with beet leaves instead of cabbage). My filling is rice with sauted onion, salt and fresh dill.

    Oh for some beet leaves.

    Clare, now that sounds even better than Michael's suggestion. It actually sounds tasty! And I'd send you some beet leaves if I could (although I have to confess these aren't mine). Fresh, green leaves must be a real treat up there.

    Our beets are just barely breaking the soil at the moment. The shoots have sprouted and are already red right from the start.

    Might I suggest those suggestions from Michael and Clare? They sound mighty tasty; I'm sure you and Roger would enjoy them, although you probably have your own favourite ways of beet-eating.
