I love LOVE beet leaves. Make some beet rolls (think cabbage rolls with beet leaves instead of cabbage). My filling is rice with sauted onion, salt and fresh dill.

Clare, now that sounds even better than Michael's suggestion. It actually sounds tasty! And I'd send you some beet leaves if I could (although I have to confess these aren't mine). Fresh, green leaves must be a real treat up there.

Might I suggest those suggestions from Michael and Clare? They sound mighty tasty; I'm sure you and Roger would enjoy them, although you probably have your own favourite ways of beet-eating.
